Color: The two most common types are green and purple (also sometimes called white). While the exterior color differs, the inner flesh of both varieties is white and their flavor is nearly identical.
Bulb size: Most varieties are harvested when the swollen stem, or bulb, is about 2 to 3 inches in diameter.
Pest and disease resistance: Some kohlrabi seed varieties offer higher resistance to common brassica diseases like black rot and downy mildew.
Speed to maturity: Kohlrabi grows quickly and is typically ready to harvest 45 to 60 days after planting. Faster-growing varieties are often recommended for spring planting to mature before the summer heat arrives, which can cause the bulb to become woody.
